There are a few basics that every landlady should be able to do sleep walking; hospital corners for example or unblocking a toilet. Here’s another, knocking up a batch of beautiful scones. There are scone recipes a plenty but I find many are too time consuming, rubbing butter into flour is not a job to be started when you’ve just finished stripping & scrubbing & can can already hear early guests crunching their way up the drive.
This recipe leaves hands virtually flour free for answering the door & they will be ready before they’ve had time to settle into a sofa. I find an air of panic & a slightly harassed hand actually adds to the lightness of the scone.
Pre-heat oven to gas mark 6, 200*c
Line a large tray with baking paper
450g self raising flour
3 tsp baking powder
3 tbsp icing sugar
200ml single cream
1 tbsp lemon juice
125ml lemonade
Add the lemon juice to the cream. leave for 5 mins if you have time
In a bowl combine all the dry ingredients & stir
Make a well & pour the wet ingredients into the dry, stir lightly with a knife until combined
Tip onto a floured surface & press as gently as possible into shape, approx 1 inch thick
Using a cutter cut as many scones as you can before reshaping the dough & cutting again
*I find a 2 inch cutter makes a good size, that cooks quickly
Brush the tops with milk & a sprinkling of caster sugar
Bang in the oven for 10 minutes, checking after 5 minutes & turning the baking tray
Remove from the oven when biscuit brown, split, spread, serve, simple!
